Our Waterloo counter is situated within Greensmiths, a fantastic shop that aims to offer a wide range of great quality produce all under one roof. Greensmiths owner, Chris Smith, came up with the concept - a one-stop shop, housing a butcher, baker, grocer and wine merchant, as well as stocking all of the day-to-day store cupboard ingredients you'd ever need – his aim being to run a shop which supported local, independent suppliers while competing with supermarkets in terms of convenience. Chris was a very loyal customer at our Borough Market stall, and long before he took his site on Lower Marsh, asked Tim if the Ginger Pig would be his in-house butcher.
Butcher-manager Martin and longstanding Ginger Pig butcher Chris run the butchery counter together, and have rapidly become very popular in the area, with very loyal customers who return as much for the service as they do the quality meat. As well as a fully stocked meat counter, there’s also a deli stocking our handmade pies, cold cuts, scotch eggs and hot sausage rolls.
