Visited the Pickering shop last Saturday and as I said to the assistant "I have died and gone to heaven"! Purchased some of the Toulouse Sausage after spending quite some time wandering around the shop. Added this later to some puy lentils and voted them the best sausages tasted to date! We are frequent visitors to the Pickering and Helmsley area and will be returning. Thank you.

The best place ever!!! My boyfriend and I just love the place. The meat is by far the best I have found in London and the staff are always so friendly and full of cooking tips and recipes. I frequent your shop in Borough but only get down there on Saturday so I am over the moon that you are opening up in Hackney as it's round the corner and means good meat all week. Keep up your outstanding work!

go to the pickering shop all the time, was such a relief when it re-opened. But was has happened to the idea of a butchery there???? Have you given up now you got the Thornton Dale shop? Would be great to have a bigger variety in Pickering - was good when I could get cuts etc. The lamb and the pork burgers were a nice addition last week, and there were lamb cuts a few weeks ago, but this week it is back to sausage and bacon and not much more. Sometimes i think i could live off your sausages alone, but some change is nice!

Old Spots Sausages

Just visited Pickering today to buy a Green Man and saw that you have taken over the deli there. We have just had some of your Old Spot sausages for supper and Chris and I are in firm agreement that they are the best we have tasted for ages.

Well done and is there any chance of ordering through the internet (lazy as we live in York but the Pickering-Malton road can be hell at the weekends)?

It is not simply good care of the animals, not just great meat, nor good location.... I tell you what it is
, it is the honest, caring, and professional staff that make the Ginger pig that makes the Borough market one the best butcher in town...

The service at Borough Market is excellent. I was served by a knowledgable and charming young man, Charlie, who was able to speak with real insight about the quality, cut, flavour and suitablity of the produce. I haven't seen him recently however so hope he's just on holiday....and that it was a good one!

We are in amazing meat heaven! Discovered the newly opened Ginger Pig in Hackney whilst eating accross the road from it a few weeks ago and we have been back twice weekly ever since. Bacon that tastes like good old fashioned bacon (not a drop of water in sight) and the most fabulous ribeye steaks, pies great and tonight I am cooking roast pork, can't wait. The first time in 15 years of living in Tower Hamlets that we have been able to get really good meat, we have been travelling all the way to Kent to buy our meet. Sorry lovely organic farmer in Kent, you have just lost out to the Hackney Ginger Pig. Looking forward to the rest of the shop being up and running, keep up the good work!

I would never normally contribute to these pages, but I took a large selection of sausages, loads of bacon and a couple of black puddings to suffolk where a bunch of us rented a house for the bank holiday. I phoned in my order to Borut in Hackney and everyone has now put on about two stone! Having lived off the land most of my life I'm really fussy and your meat is FANTASTIC! Marylebone Store

Hello,
I would like to say that the Ginger pig is one of the finest places in the world.
I love to go there and chat to the french man who makes the terrines, foie gras, and patés. He is quite nice, and the gentleman who always gives me my cuts of meat is really nice.
You guys are absolute champions in my eyes, and i promise to buy you a round of beers if i ever see you out.

I am a big fan and customer of the Borough Market shop but also managed to take a trip to Grange Farm a couple of years back and ate in the pub next door - it was a fantastic day out and the food and beer in the pub was spot on!

Second visit to the butcher in thornton le dale, its a three hour round journey and worth the visit. Steve is a star and its a real pleasure to buy fantastic quality meat from him. he's a bit of a dish himself actually.

The Hackney Ginger Pig Shop.

My husband and I were in their new shop in Hackney yesterday to get ourselves some sirloin and rib-eye steaks after being recommended by a family friend. We were pleasantly surprised that they have a "deli" in the basement selling cold cuts, fresh veg, anti-pasta, sauces etc etc. They even have the yummiest brownies !!!!!!! PS: We had the tastiest sirloin & rib-eye steak !!!!!!!

Bought some pork belly and large pork chops for the weekend. Your pork is truly outstanding. It looks, feels and smells great raw and cooks so incredibly well. I don't buy in the myth that you have to incenerate pork and providing you cook it right, your pork is as tender as aged ribeye. There is nothing that comes close to your meat in my view. The best thing, though, is that anyone who has been converted to real meat will know just how awful supermarket meat really is, and hopefully people will snub supermarkets to support companies like yours. Well done and thanks!

I discovered your Hackney shop recently and was served by Borut (just one small 'a' makes him a different person). Having previously been a customer of Lidgate's in Notting Hill and Randall's in Wandsworth Bridge Road, it's refreshing to find a fine butchers that sells its own produce at realistic prices and offers a knowledgable and courteous service without being patronising and smug. Borut knows his butchery and wasn't afraid to show us 45 day aged rump covered in mould on one side - although I did follow him down the shop to watch. He even offered it to me to smell! One surprise though - I understand your veal is Dutch. I have concerns about methods of rearing outside the UK. The beef was as good as it gets and the new season lamb this week was superb. You have winning a formula; stick with it and your customers will come back over and over again.

Thornton Dale Shop

After reading Victorias comments we too, travelled a long way to visit the Thornton Dale shop. Not sure which was the biggest disappointment - the meat or the absence of Steve the dish!!

I live by the Borough shop and we love it - but please please please do some more weeknight 6pm openings. You'd get much more trade at that end of the day than by opening early at 8:30am, I promise! there are lots of families living in the area.

Best service and meat ever!

Thought I would try some of your meat as I was passing by and just couldn,t decide on which cut I needed for a slow cooked stew Well this is the first butchers shop I have ever been to where the butcher called Charlie? gave me some delicious ideas and recipes and good advice on what I needed. It took me back to France where the butchers there are passionate about meat and how to cook it. Thanks Charlie you were so right with the cut of beef and your smiley face made my day! I will definately be back. Perhaps next time you could cook it for me!

Happened to be passing your Hackney shop on Friday night last week. As it was still open (6.30 closing - brilliant!) I went in to get some meat for the weekend. I have to say, your beef burgers are the best I have tasted, and the steak we had last night was absolutely amazing! Also, the service was fantastic. Your lovely butcher (Didn't get his name unfortunately) gave me loads of advice and was really cheerful. Ginger Pig will now be a regular feature of my Friday night drive home!

Butchery Class

WOW!! Last night I attended my first ever 'Butchery Class' - beef. It was amazing. Perry and Borut were great teachers and created a great atmosphere in which to learn and to have fun. Not only did we all get to help 'chopping' three loins into various cuts, we also each got to 'create' our own 'Cote de Boeuf'. And to top it all, we then devoured 8kg of forerib which had been cooked to perfection. What a great way to learn. Thank you very much. Perry/Borut - You'll definitely be seeing me again!

I think I was one of the first Marylebone customers. I still only buy my meat there. There is absolutely no comparision between the ginger pig and any other butchers shop or supermarket. I can't bear places that 'dress up' poor products with herbs and spices. A factory farmed sausauge is always gonna taste like one.

Whilst the food is not the cheapest amongst the local competition I am happy to pay that little bit extra for the quality of the cuts of meat provided by Les and the team.

I live in Whitby and used to get Cree's Kitchen Thai curry packs from the deli in Whitby before it closed. I now get the packs from the Cree's Kitchen website and I recommended the Ginger Pig to them, and they said they were going to approach you and so I was wondering if you are going to stock their curry packs soon.

amazing pig and cow!

I have been a converted customer of the marylebone shop for some time - but the past few weeks have been marked by two specific roasts that wowed their audience. I'm writing to thank the butchers for their advice which made all the difference and will be remembered for a long time with Pavlov style drooling-

1. most of a pig belly - rubbed with salt and perched on onion and rack - scraped the sides of the scorching hot oven - four and a half hours later - over a foot square of perfect crackling - with melting pork underneath - and incredible brown juices for gravy. mouthwatering flavour with nothing added

2. four-ribs of ancient cow- aged to a deep translucent purple- incredibly tender and savoury - rubbed with salt and mustard powder and thrown in a hot oven for the briefest of acquaintances - all juices retained in the roast - only pure dripping in the tray

both meals were eaten in an almost holy reverential silence, the main sounds were of appreciation and it continued - the bones made beautiful stocks. thank-you again, worth every penny for the experience which I look forward to repeating many times

I should be over the moon - but somehow I get a feeling that I am not too sure.

I just wandered past our local Budgens in Crouch End and was very pleased to see that it is selling Ginger Pig meat. No more driving first thing on a Saturday morning in Marylebone!

However, my wife and I got to talikng about whether it is the same source of meat?

Is this the first "thin end of the edge" to over demand leading to a fall in quality??? Can a small range of carefully managed farms supply all and sundry?

We have been keen customers of Marylebone since it first opened and whilst largely very happy with quality - have once or twice noticed the meat being a tad watery. Our feedback was brushed aside - but hey you can't be 100% all the time, so we keep on going back.

But can such a generally high quality be maintained when there are more outlets to service?

I am so happy that there is now a shop in Hackney, good work and forward thinking by the Ginger Pig...again! I did a pre Christmas Christmas dinner last week for friends and got the turkey, ham, bacon and meat stuffing from you guys. Hackney Store - 2 trips in 1 day!!!!!!!!!

Martin is a regular visitor to your store and bought a fabulous pork shoulder this morning and invited me over for lunch. I was astounded at the quality and easily convinced Martin to take me straight away. We bought the most beautiful huge sausage roll and have just split it. It was the best I have ever tasted...and i've tasted a lot! The parkin and the flapjack wasn't bad either. I'm already planning my 2nd visit tomorrow!!!!!!!Thank you to all involved in the making of my sausage roll!!!!

Well its always good to note that what is good for Southern Softies can be as good for us rough and tough Northerners. Having moved to Pickering last year we use where possible the shops in and around Pickering. We always pop into the Ginger Pig to see what is good and they have on offer, only last year had a great little cheese and olives hamper made up for my father-in-laws birthday (well my wife did) and then this year whilst my wife was walking by she spotted the "TRUFFLE". Now having to watch the figure and all that my wife went in and purchased some on the home made truffles, and last Friday on my return from work I tried them out with a cup of Yorkshire tea and WOW no Double WOW what a delight, fab, great, value for money. So the next day we wnet and purchased some more, we see these playing a part in our after dinner treats with coffee. They maybe small and round "a bit like me" but hey they pack the taste buds. My wife even says they are better than sex.....! Now that says alot about me but go in and try them for yourself......Darren

I peered into the window of the Moxon Street shop at the week-end and was tempted by the hot sausage rolls on display! The most charming lady who was serving, took a hot sausage roll from the heated cabinet and proceeded to wrap it so beautifully in waxed paper and then a bag. When I got outside I found waiting simply impossible as the smell of it was so seductive that I went over to the Moxon Street car park railing and there downed the said sausage roll, every mouthfull sheer heaven! Fellow Man, go there, buy and eat and you too can savour this extraordinary experience!

Well … I buy some belly pork at a premium price from the famous “Ginger Pig” at Borough Market, get it home and find the bones still in it (ribs). First time in twenty years I have bought this joint with bones in it. Didn’t even bother to look. Checked with my ol’ mum and she said it was a disgrace. I suppose you will tell me that the joint these days is meant to be served on the bone ? But as far as I’m concerned I got a load of bones and a joint I cant use for the purpose I bought it ….. and paid a king’s ransom for it, to boot. And you call yourself a Yorkshireman ? You may survive in Borough Market but you’d die on the high street in Leeds !

*Ginger Pig response - I learnt my butchery skills in Doncaster, Yorkshire. My customers always asked for their belly pork to be on the bone, it adds to the flavour and assists the dispersion of the fat away from the meat. I have always taught my London butchers to do the same. If a joint is to be rolled we would of cause take the bones out but the customer have to tell the butcher how he wants his joint prepared. Would just like to say how great your shops are and thanks to all you have all you have done to promote good quality British meat.

Two slight critisisms if I may though.....

1) Please stop selling Dutch veal just to appease the wealthy Marylebone customers - if Waitrose can stock British Rose veal so can
you.

2) Why aren't the prices listed individually anymore on the meats at Moxon Street (in fact they disappeared altogether for a few weeks)
I shop to a budget and it makes it a lot harder to work out what the cost is.

P.s Went to new Hackney shop and must just mention how friendly the couple in the Deli downstairs are - lovely people.

I went to one of your beef classes this week and I just wanted to say thank you very much. The two guys running the evening made it very enjoyable and although I thought there would be more personal cutting time, it was good fun and very informative. The roast beef at the end of the night was simply sublime!

I am a former vegetarian to just started eating meat due to going 'primal' or 'paleolithic' in my nutrition.

however, I still believe in high ethics and animal welfare, which is why I only buy free range, grass fed meat. Not only does ginger pig supply the high ethical quality i want, it also tastes amazing, and the service is ace!

I had the pleasure of going to your shop in Victoria Park.. as an actress in the Oxo ad! The butchers were so informative during the shoot and I bought some Pork. I have just finished the last joint with family, and it was the tastiest most delicious meat EVER!!!!!!! I also had some of the chipolata sausages.... they too were absolutely delicious....
I hope you are open as I'm having a dinner party this weekend.... and I want to try the beef..... I'm sure I'll be guided to the most succulent tastiest cut! Can't wait!!
